My husband is a huge fan of salmon, while I usually eat it with much less enthusiasm. (He actually gets a little upset with me! “How can you not like salmon??”) We’re making an effort to include more salmon in our meals, so when I came across this recipe, I decided to give it a shot. To my surprise, I absolutely loved it! The sauce was a delightful blend of bright, citrusy, spicy, sweet, and savory flavors. I opted to bake the salmon in the oven rather than grill it, and it turned out super juicy and delicious. This picture was my finished product! I added the avocado because we had one that needed to be used. A big thank you to Elizabeth Van Lierde for this fantastic, healthy, and quick, brain-boosting recipe. It seems I’ve become a salmon lover after all!
